You Can’t Rush a Tree: What Avocados Teach Us About Seasonality
We live in a world where we expect almost everything to be available all the time.
Strawberries in winter. Tomatoes year-round. Avocados every week of the year. If something is out of stock, we assume something went wrong.
But agriculture doesn’t work that way.
At HASSY, we know this firsthand because we didn’t start with avocado oil. We started with avocado trees.
Our family has been growing Hass avocados in Michoacán, Mexico, for three generations. Long before HASSY was a bottle on a shelf, there were trees, harvests, rainy seasons, changing fruit and people who understood that nature has its own timeline.
And building HASSY has brought us back to a very simple lesson: You can plan around nature. But you can’t rush it.
Avocados Change With the Seasons
An avocado isn’t a standardized ingredient that comes out exactly the same every month of the year.
The fruit changes throughout its growing cycle. Its maturity, moisture and oil content evolve. Weather conditions change. Harvest timing matters. And those differences become especially important when you’re making something like Extra Virgin Avocado Oil.
For us, making great avocado oil isn’t simply about finding avocados.
It’s about having the right fruit at the right moment.
That’s one reason we think understanding where an oil comes from matters so much.
When you know the origin of the fruit, you can start understanding the agriculture behind the bottle, not just the finished product.
What Happens When We Try to Have Everything, All the Time?
As humans, sometimes we forget about seasonality. We want things faster. We want them cheaper. We want the same product available 365 days a year, regardless of what is happening in the field.
And sometimes, that’s when problems begin.
When the priority becomes maintaining constant supply at any cost, there can be pressure to make compromises somewhere else on sourcing, quality, transparency or the connection to the original ingredient.
At HASSY, we’re learning to approach that differently.
Our goal isn’t simply to find avocado oil at the lowest possible price. We want to understand where the avocados were grown, the condition of the fruit, when it was processed and who is behind it.
That approach isn’t always the easiest one.
But growing up around agriculture teaches you that easier and faster don't necessarily mean better.
From Imperfect Avocados to Something Valuable
Seasonality also teaches us to look differently at the fruit itself.
Not every avocado coming from a farm is going to look beautiful enough for a grocery-store produce display. Some are too small. Some are too large. Some fall early. Some simply don't meet the cosmetic standards of the fresh market.
That doesn't mean the fruit has no value.
One of the things we love about avocado oil is the opportunity to give some of that fruit another purpose. Instead of judging an avocado only by how perfect it looks on a shelf, we can look at what’s inside it.
For a company that started with growers, that distinction matters.
Building a Food Business Around Nature
There’s an interesting tension in building a modern food company. Retailers need forecasts. Distributors need inventory. Customers expect availability. We need to plan production months ahead.
Meanwhile, somewhere in Michoacán, an avocado tree is completely unconcerned with our spreadsheet.
And perhaps there’s a lesson in that beyond avocado oil. We’ve become very good at optimizing everything: faster deliveries, faster growth, faster production, faster results.
But some things become better because they’re given the time they need.
Fruit needs time to mature.
Trees need time to grow.
And businesses do too.
At HASSY, we’re still learning how to balance those two worlds: the speed of building a modern CPG company and the rhythm of the agriculture behind it. We’ll keep forecasting. We’ll keep improving our supply chain. We’ll keep growing.
But there’s one thing we’ve learned not to argue with:
