Ghost Quesadillas & Creamy Avocado Dip
A spooky little snack for avocado lovers!
Who says Halloween food has to be all about candy? These crispy, cheesy ghost quesadillas are almost too cute to eat. Almost.
Golden on the outside, melty on the inside, and paired with a creamy avocado dip, they're the perfect addition to your Halloween spread.
And because we believe there's no such thing as too much avocado, we're using HASSY Avocado Oil to crisp up the quesadillas and make our dip extra smooth and silky.
Easy to make, fun to decorate, and guaranteed to disappear faster than a ghost! 👻
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Servings: 4 (approximately 8 mini quesadillas)
Difficulty: Easy
Ingredients
For the Ghost Quesadillas
-
8 medium flour or white corn tortillas
-
1½ cups shredded cheese (Oaxaca, mozzarella, or Monterey Jack work beautifully)
-
1–2 tablespoons HASSY High Heat Avocado Oil
For the Creamy Avocado Dip
-
2 ripe Hass avocados
-
½ cup fresh cilantro
-
1 small garlic clove
-
Juice of 1 lime
-
2 tablespoons HASSY Extra Virgin Avocado Oil
-
Sea salt, to taste
-
1–3 tablespoons cold water, if needed for blending
Instructions
Step 1: Make the Creamy Avocado Dip 🥑
Add the ripe avocados, fresh cilantro, garlic, lime juice, and a pinch of sea salt to a blender or food processor.
Blend until combined, then slowly drizzle in HASSY Extra Virgin Avocado Oil while blending.
Continue until the dip becomes smooth, creamy, and beautifully glossy. If it's too thick, add a little cold water until you reach your desired consistency.
Taste and adjust the salt or lime juice as needed.
HASSY Tip: Extra Virgin Avocado Oil adds a subtle, buttery richness that makes this dip even more delicious.
Step 2: Create Your Little Ghosts 👻
Stack your tortillas and use kitchen scissors to cut them into playful ghost shapes.
For each quesadilla, you'll need two matching ghost-shaped tortillas.
On half of the tortillas, use a straw or the tip of a small knife to create two eyes and a spooky little mouth.
Get creative! Make some ghosts look surprised, others happy, and a few extra spooky.
Step 3: Add the Cheesy Goodness 🧀
Place the tortillas without faces on a flat surface.
Sprinkle a generous amount of shredded cheese over each one, leaving a small border around the edges.
Place the ghost tortillas with faces on top.
Press gently to help everything stay together.
Step 4: Get Them Golden & Crispy 🔥
Heat a nonstick skillet over medium heat and lightly brush it with HASSY High Heat Avocado Oil.
Carefully place your ghost quesadillas in the pan.
Cook for approximately 2–3 minutes per side, or until the tortillas are golden and crispy and the cheese has completely melted.
Flip carefully to keep your ghosts intact!
HASSY Tip: Don't overcrowd the pan. Giving each ghost a little space helps achieve those perfectly crispy edges.
Step 5: Serve with a Spooky Dip!
Arrange your golden ghost quesadillas on a serving platter alongside a bowl of creamy avocado dip.
For an extra Halloween touch, decorate your platter with a few cilantro leaves or serve the dip in a small pumpkin-shaped bowl.
Dip, crunch, and enjoy!
A Few Extra HASSY Tips 💚
Make them extra crispy: Lightly brush both sides of the tortillas with HASSY High Heat Avocado Oil before cooking.
Choose your cheese: Oaxaca cheese gives you that delicious, stretchy Mexican-style quesadilla experience. Monterey Jack is another great option.
Keep your dip green: Prepare the avocado dip just before serving. If making it ahead, press plastic wrap directly against the surface and refrigerate to help minimize browning.
Make it a family activity: Let the little ones help cut out ghost shapes with age-appropriate supervision and create their own spooky faces.
